When I was less than happy with my trendy, expensive Mother’s Day present, my husband (who was understandably most upset) said, “I should have gone to the wholesalers’ and bought that bottle of sauce. She would have definitely liked that!” Ismiled instantly, not because it was funny (which given the circumstances, it was) but because it was true! Very true!

I have recently discovered the part of me which delights in cooking. It has brought into my life a wonderful sense of joy that erupts each time family and friends say, “Yummm” and lick their fingers while eating anything I have conjured. I have made a slow and difficult transition from being a career woman to stay at home mom and the joy of watching my family enjoying home cooked treats helps in a big way.

Today I would like to pay a tribute to those stay at home moms everywhere – especially those who chose to care for their kids without being caught up with the seemingly attractive challenges, excitement and most importantly, the money of a career. It is cool to balance work and home successfully, it is more cool, to me, if you can make a clear choice and not linger over what could have been!

Here is a recipe for a healthy carob-flaxseed muffin dedicated to mothers who enjoy cooking to keep their families healthy and happy -

Carob – Flaxseed Muffins

Dry Ingredients
1 cup all purpose flour
1/2 cup flaxseed meal
3 tablespoons carob powder
1 teaspoon baking powder
1 teaspoon baking soda
1 cup sugar

Wet Ingredients
3 tablespoons yogurt
1/4 cup water
1 teaspoon vanilla extract
2 large eggs
1/4 teaspoon salt
1/2 cup oil (canola/corn/vegetable)
1/2 cup leftover cooked oatmeal/ pureed vegetables*

*vegetables should contain no spice or very mild spice but NO TOMATO. If using vegetables, please puree in a food processor before measuring out.

Steps

Grease 12 muffin cups and pre-heat oven to 350F.

Sift together dry ingredients in a large bowl.

In another bowl, whisk together wet ingredients. Pour wet ingredients into dry ingredients and use a fork to mix until the dry ingredients have been moistened.

Pour into muffin cups filling each halfway. Bake at 350F for 18-20 minutes or until a toothpick comes out clean.

    “Is there any connection between cooking together and a happy family life? The answer lies in affirmative if the findings of a study released today in UK are any indication.
    The significance of cooking together also reflects the fact that more than a quarter recall their fondest memories are the ones of baking with their parents or grandparents, researchers said.
    And it doesnt end with family bonding. A third of those questioned in the survey said home bakers make better parents.
    The study also said an average person bakes only 2.3 times a year. Women, traditionally more skilled in kitchen, fared better at 2.9 times in comparison to men baking 1.6 times on an average in a year.
    Further, 51 per cent of those surveyed didnt know what goes into making a sponge cake and nearly 63 per cent were incapable of putting together a classic English scone, the research conducted by a baking company indicated.”
