			<content:encoded><![CDATA[<p>When I was less than happy with my trendy, expensive Mother&#8217;s Day present, my husband (who was understandably most upset) said, &#8220;I should have gone to the wholesalers&#8217; and bought that bottle of sauce. She would have definitely liked that!&#8221; Ismiled instantly, not because it was funny (which given the circumstances, it was) but because it was true! Very true!</p>
<p>I have recently discovered the part of me which delights in cooking. It has brought into my life a wonderful sense of joy that erupts each time family and friends say, &#8220;Yummm&#8221; and lick their fingers while eating anything I have conjured. I have made a slow and difficult transition from being a career woman to stay at home mom and the joy of watching my family enjoying home cooked treats helps in a big way.</p>
<p>Today I would like to pay a tribute to those stay at home moms everywhere &#8211; especially those who chose to care for their kids without being caught up with the seemingly attractive challenges, excitement and most importantly, the money of a career. It is cool to balance work and home successfully, it is more cool, to me, if you can make a clear choice and not linger over what could have been!</p>
<p>Here is a recipe for a healthy carob-flaxseed muffin dedicated to mothers who enjoy cooking to keep their families healthy and happy -</p>
<p><strong><span style="text-decoration: underline;">Carob &#8211; Flaxseed Muffins</span></strong></p>
<p><span style="text-decoration: underline;">Dry Ingredients</span><br />
1 cup all purpose flour<br />
1/2 cup flaxseed meal<br />
3 tablespoons carob powder<br />
1 teaspoon baking powder<br />
1 teaspoon baking soda<br />
1 cup sugar</p>
<p><span style="text-decoration: underline;">Wet Ingredients</span><br />
3 tablespoons yogurt<br />
1/4 cup water<br />
1 teaspoon vanilla extract<br />
2 large eggs<br />
1/4 teaspoon salt<br />
1/2 cup oil (canola/corn/vegetable)<br />
1/2 cup leftover cooked oatmeal/ pureed vegetables*</p>
<p>*vegetables should contain no spice or very mild spice but NO TOMATO. If using vegetables, please puree in a food processor before measuring out.</p>
<p><span style="text-decoration: underline;">Steps</span></p>
<p>Grease 12 muffin cups and pre-heat oven to 350F.</p>
<p>Sift together dry ingredients in a large bowl.</p>
<p>In another bowl, whisk together wet ingredients. Pour wet ingredients into dry ingredients and use a fork to mix until the dry ingredients have been moistened.</p>
<p>Pour into muffin cups filling each halfway. Bake at 350F for 18-20 minutes or until a toothpick comes out clean.</p>
